Beloved by restaurateurs and Dallas foodies alike, Chef Javier Perez is well-known for his trail-blazing spirit and eclectic cuisine. To the excitement of all who flock to enjoy his impressive creations, Chef Javier has brought a fresh culinary experience to the Frisco food scene. With his newest project, Bistro Trio Euro Tavern, Chef is ready to push the boundaries of typical tavern fare. He's combining innovative concepts, the finest flavors of Europe, and the freshest ingredients available. His aim: To create an experience so unique that Bistro Trio becomes a destination spot for all Dallas-area food lovers.
While studying to become a doctor, Chef Javier discovered his deep passion for food. That passion prevailed when he left med school and brought his talents to Dallas in 1982. Working at some of the best restaurants in the Metroplex, under some of the best mentors in the business, Chef Javier honed and perfected his craft. Chef Javier rose through the ranks at prestigious, trendsetting restaurants such as Radcliffe Continental Seafood, San Simeon & Sffuzzi, and McCormick & Schmick’s. He’s led as executive chef at Nicholini’s Seafood Grill, Chamberlain's in Addison, and Crudo Italian Taverna. With 35 years of experience and features in D Magazine, North Dallas Living, and Fox 4’s Good Day, Chef Javier is constantly upping his game to bring redefined upscale flavors to North Texas.
